Aburi Tori Mentsuyu Ramen

I've been playing around with a new ramen idea recently.

I wanted to make something that felt distinctly Japanese, but didn't rely on a heavy or rich broth. The idea was to build a bowl around contrast: a clean, delicate soup paired with a chicken topping with much more intensity.

That's where this bowl started.


The chicken is slowly marinated and gently cooked before being sliced and finished over an open flame. The final torching is more than just a finishing touch. It completely changes the character of the chicken, bringing out its deeper savory aromas and creating a lightly charred surface while keeping the meat tender underneath.

I wanted the broth to take a quieter role.


Rather than competing with the chicken, it provides a clean, savory foundation with subtle sweetness and umami depth. It gives the bowl enough structure to carry the richness of the chicken without making it feel heavy.


The toppings stay deliberately simple: fresh greens, finely sliced spring onion, sesame, and a soft ajitama. Nothing too complicated.

The goal was balance.


A sip of broth first. Clean and savory.

Then the chicken: tender, aromatic, and smoky from the flame.

The greens bring freshness, the spring onion cuts through the richness, and the egg adds another layer of texture and depth.


Then you go back to the broth.

And somehow the bowl tastes slightly different after every bite.

That's probably my favorite part of developing ramen. It's not always about adding more. Sometimes it's about finding the point where every element has a purpose and nothing is fighting for attention. This bowl is still a work in progress.


I'm not sure yet where it will ultimately end up, or whether it will ever become part of a menu. For now, it's simply an idea I'm enjoying developing, tasting, and refining.

Maybe it stays as an experiment. Maybe it becomes something more.


For the moment, I'm calling it Aburi Tori Mentsuyu Ramen.


A little umami.A little sweetness.A lot of aroma.And just enough fire. 🔥
